Walk about two minutes from the Ginza 1-chome intersection and you will reach a brick house along Ginza-Gasuto-dori Street. There is no conspicuous sign. Enter through the antique door, placed in a way that it cannot be seen from outside. This is Teppanyaki GINZA sima, a high-end restaurant where you can enjoy teppanyaki dishes made with carefully selected ingredients from all over Japan.
The main dish is Kobe beef of the highest A5-grade beef (*1) with BMS No. 10 (*2) or higher.
*1: A5-grade beef is the highest meat quality grade. There are strict definitions for what can be called Kobe beef, and only beef with a meat quality of at least A4 grade and BMS No. 6 or higher can be called Kobe beef. *2: BMS stands for Beef Marbling Standard and expresses the degree of marbling in 12 stages. The higher the number, the higher the rank.
The restaurant only uses Kobe beef produced at Kawagishi ranch in Hyogo Prefecture, which has won awards such as the Minister of Agriculture, Forestry and Fisheries Award and is only available at a limited number of restaurants in Tokyo. The rice is Koshihikari rice from Uonuma, produced by Senjyu Co. Ltd. in Niigata Prefecture. Organic vegetables are delivered directly from Ono noen in Kawagoe City, Saitama Prefecture. The seafood is carefully selected by the chef at Toyosu Market. The after-meal coffee is the restaurant’s original blend, created after countless tastings. Using specially ordered tableware and in the prime location of Ginza, the restaurant uses the finest ingredients selected from all over Japan to offer a variety of dishes that bring out the full flavor of each ingredient.
There is also a wide selection of wine and Japanese sake. Particularly for wine, the selection centers on French wine, with over 300 bottles on hand at all times, including vintages from the 1960s and Bordeaux and Burgundy wines from the 1980s to 1990s. A sommelier recommends wine that matches the food and the customer’s preferences.
The restaurant has seven counter seats on the first floor.The second floor serves as a private space for one group per day, up to six people. On both the first and second floors, skilled chefs grill ingredients in front of the customers, creating beautiful dishes that are a sight to behold. The menu only offers set courses.
