Sushi Nishimura can be found down a side alley off one of the main streets that pass through the Roppongi intersection. It offers no signboard, so it’s easy to miss if you don’t know where to look. The owner, Fumiteru Nishimura, has 33 years of experience as a sushi chef. He began training as a sushi chef at the age of 20 and went on to serve for 12 years as a manager, captivating countless connoisseurs at Sushi Nakata—a venerable Edo-style sushi establishment in the Imperial Hotel and considered one of the three best sushi restaurants in Ginza. In 2015, driven by the desire to bring his own vision of sushi to life, he established his own restaurant, Sushi Nishimura, at its current location. To this day, this hidden gem remains well-loved by regular customers from his time at the Imperial Hotel, as well as discerning connoisseurs who visit after hearing the rumors.
Driven by a desire to refine the essence of Edo-style sushi for sublimation into his own distinct approach, Nishimura pours his heart into each and every piece, serving only the finest sushi when standing behind the counter. Every morning, Nishimura personally selects seafood and other produce at Toyosu Market with uncompromising dedication to using only the highest-quality ingredients. He meticulously prepares each fish to draw out its natural flavor to the fullest. The sushi rice is a blend of three carefully selected varieties, combined with a rare aged red vinegar to create a shari in perfect harmony with the toppings. This unwavering commitment to sushi, cultivated through years of dedication, creates a sense of unity and depth that unfold the moment it touches the palate—captivating loyal patrons and first-time guests alike.
A good landmark to help you find the restaurant is the LUUP Port, electric kickboard sharing station, in front of the building. Once there, head down the stairs visible through the glass door behind the LUUP Port to get to the restaurant. Inside, the warmth of wood and gentle indirect lighting set the tone of the décor. Private rooms are available, as well as seating along a counter crafted from a single slab of cypress. Interior retains the dignity of a traditional sushi restaurant, while also offering a relaxed, welcoming atmosphere where you can savor delicious sushi in comfort.
The menu offers a chef’s-choice course of appetizers and hand-pressed sushi. Great attention has also been paid to the tableware and sake vessels, with a selection ranging from antique Imari porcelain and treasured vintage pieces through to works by contemporary artisans—all chosen to elevate the presentation and flavor of each dish. A Sommelier Excellence is on staff, ready to recommend the best wines and sake to go with your sushi and other dishes. If you’re interested, don’t miss the opportunity to experience these exquisite pairings.
Even now, more than ten years after opening the restaurant, Nishimura continues to evolve while remaining committed to “authentic sushi.” Each piece, crafted with utmost dedication and free of ostentation, reflects the beauty of minimalism, carrying both deep respect for Edo-style sushi—Japan’s iconic culinary tradition preserved since the Edo period—and the pride of a master artisan. Be sure to experience genuine Edo-style sushi at Sushi Nishimura.
