In 2015, driven by the desire to bring his own vision of sushi to life, he established his own restaurant, Sushi Nishimura, at its current location. Every morning, Nishimura visits Toyosu Market to select seafood and other produce with uncompromising dedication to using only the highest-quality ingredients. He meticulously prepares each fish to draw out its natural flavor to the fullest. The shari sushi rice is a blend of three carefully selected varieties, combined with a rare aged red vinegar to create rice that perfectly harmonizes with the toppings. A convenient landmark to help you find the restaurant is the LUUP Port electric scooter station in front of the building. Just head down the stairs visible through the glass door behind the LUUP Port to get to the restaurant. Inside, the warmth of wood and gentle indirect lighting set the tone of the décor.
