He went on to open his own restaurant. In addition to sushi, Sushi Hirose has won praise for various dishes that bring out the innate umami of ingredients.
The restaurant has just one menu, the Omakase Course (“Chef’s Choice Course”), which changes according to the ingredients Hirose sources on any given day. Hirose personally visits markets and also procures ingredients from across Japan. The seafood he sources is prepared in a way that ensures the ingredients’ intrinsic flavors are fully appreciated. The sushi rice is cooked to perfection and just the right firmness. It is finished with a special vinegar mixture made from three different types of vinegar, the main component of which is red vinegar. With every grain expertly cooked and seasoned, the sushi rice perfectly complements the carefully prepared toppings.
Hirose’s culinary skills ensure that each piece of sushi melts in the mouth and that each mouthful ends in a smile. Comprising appetizers, sashimi, grilled dishes, steamed dishes, and more, the Omakase Course offers an immensely satisfying experience. The restaurant also has a rich selection of sake and wine to be enjoyed with meals.
