Walk about two minutes from the Ginza 1-chome intersection along Ginza-Gasuto-dori Street, and you will reach a brick house. There is no obvious restaurant sign outside. Just go through the antique door that is positioned so that it cannot be seen from the street, and you will find yourself in Teppanyaki GINZA sima, a high-end restaurant serving teppanyaki dishes made with carefully selected ingredients from all over Japan.
The highlight of the menu here is Kobe beef of the highest A5 grade with a BMS of at least No. 10. There are strict definitions for what can be called Kobe beef, namely only beef with a meat quality of at least A4 grade and BMS No. 6. (BMS stands for Beef Marbling Standard and expresses the degree of marbling in 12 stages. The higher the number, the higher the rank.)
The restaurant only uses Kobe beef produced at Kawagishi Ranch in Hyogo Prefecture, which has won awards such as the Minister of Agriculture, Forestry and Fisheries Award, and is only available at a limited number of restaurants in Tokyo. The rice is Koshihikari rice from Uonuma in Niigata Prefecture, produced by Senjyu Co. Ltd, organic vegetables are delivered directly from Ono Farm in Kawagoe, Saitama Prefecture, and seafood is carefully selected by the chef at Toyosu Market.
The after-meal coffee is the restaurant’s original blend, painstakingly created through countless tastings, while tableware has all been specially ordered. Based in the prime location of Ginza, the restaurant uses the finest ingredients selected from all over Japan to produce a variety of dishes that bring out the full flavor of each ingredient.
There is also a wide selection of wine and Japanese sake. The selection centers on French wine, with over 300 bottles on hand at all times, including vintages from the 1960s and Bordeaux and Burgundy wines from the 1980s to 1990s. A sommelier can recommend wine to pair with food according to customers’ preferences.
The restaurant has seven counter seats on the first floor. The second floor serves as a private space for one group per day, seating up to six people. On both the first and second floors, skilled chefs grill ingredients in front of customers, creating strikingly beautiful dishes.
